It's your right to hold one booked day on the boat. It never expires or gets spent: it's locked while you have the booking and returns when it's over.
It depends on your plan. Standard gives you 1 coin, so one booked day at a time. Premium gives you 2.

Because there's no monthly cap on outings. The limit is how many bookings you can hold at once. As soon as you sail, you get your coin back and can book again. The more you sail, the more you book.
